Iberico Ham Fermín is obtained from the hind limb of the black Iberian pigs. There are differences between Iberico Ham Fermín and the Iberico Ham de Bellota Fermín, given by the process of breeding and feeding of pigs, even though the quality of the animal is the same, feeding makes the difference in taste.
The elaboration process of Iberico Ham Fermín is slow and laborious; it can last up to 24 months and is carried out in five stages or phases like the selection and raw material receiving, salting and washing, settling, drying or warehouse, maturation and aging.
